
Stempels is situated in the former printing-office and type-foundry Royal Joh. Enschedé. In June 2005 Martijn Franzen and Frans van Cappelle bought the monumental premises in Haarlem’s inner city. In January 2006 the rebuilding started, conducted by Yske Braaksma, architect. Original interiors has been kept as much as possible.
In deference to the skill, practised in here for three ages, the new owners chose the name “Stempels” (= stamps). In the several get-ups and decorations of the restaurant a bit of graphic art is cherished. The hotel and restaurant complex has been opened since July 30th 2006. Chef Martijn Franzen (1967) started restaurant “De Franzen keuken” in 1997. The restaurant has soon been well known as “Franzen” in and outside Haarlem. Frans van Cappelle (1954) has become well known with his restaurant “De Componist” in Haarlem.
He used to be a fiscal lawyer, but now he has been active in the restaurant business for over 30 years.
