Because we really wish to serve the perfect espresso, we have chosen for Illy’s coffee. The history of this brand started in 1933, when Francesco Illy (originally Hungarian) founded his company Illycaffè in Trieste (Italy). Two years later he introduced an automatic coffee machine which replaced steam pressure by compressed air. This machine is seen as the precursor of the modern espresso machine. At Illycaffè quality is the keyword. Improvement of taste and flavour is continually aimed at.
Illy’s blend consists of nine different Arabica’s. For the composition of the blend, the beans are severely selected for size, ripeness and undamaged condition. After the entire blend is roasted at the same time, it is cooled by air.
The company chooses a production process which doesn’t effect the environment badly and doesn’t need a lot of energy. Illy was the first agro-industrial company awarded with an ISO 9001-certificate by Det Norske Veritas, Italy (DNV).
